Freeze-drying removes water from a material at low temperature under vacuum. Taking the water out slows the chemical changes that can happen in solution, which is why so many research materials are supplied and stored as a dry powder rather than pre-dissolved.

It also travels better. A dry, sealed vial is more forgiving of a journey than a liquid would be, and it lets us keep the same handling from cold storage right through to the courier — picked cold, packed dry, sent tracked.
